Chai Negroni

This is the Negroni that’s swapped its sharp Italian suit for a wool coat and a scarf and now insists it’s only popping out for one. Classic gin, bitter Campari, and sweet vermouth, gently warmed and rounded by chai spice — cardamom, clove, cinnamon, that whole cosy conspiracy — layered in just enough to deepen the bitterness without tipping it into pudding territory.
